Crispy herb crepes
A pizza-bruschetta inspired breakfast crepes that won’t leave you feeling guilty! Absolutely delicious, packed with all the good stuff and super easy to make!
Crepes made with garbanzo bean (chick pea flour) topped with a delicious dill-avocado spread and stir fried veggies (green onions, red peppers, tomatoes, capers and spinach).

For the crepes
1 1/4 cup garbanzo bean flour
1 tsp cumin powder
1/4 tsp cayenne pepper
1/4 cup fresh parsley, chopped
1/4 cup fresh mint, chopped
1/4 cup fresh dill, chopped
1 1/4 cup water
A few tsp oil for cooking the crepes
Salt, to taste .

Preheat a cast iron skillet.
In a bowl, whisk the flour with all the ingredients together (except oil), until smooth. Check for seasoning and consistency of batter (neither thick nor runny). Set aside.
Gently pour the batter (3/4th cup) on the skillet and spread around evenly. Pour a tsp of oil around the edges. Cook for about 2 minutes. Gently flip after making sure it is cooked through all around. Add a tsp oil (if needed), and cook for another 2 minutes (until slightly crisp) Take it off the pan, evenly spoon the avocado spread, add the toppings (recipe below), cut and serve immediately. .
For the avocado spread
1 avocado
1 clove of garlic, crushed
Juice from 1/2 lime
1/2 tsp nutritional yeast
1/4 cup fresh dill, chopped
Mash the avocado, add the rest of the ingredients. Mix well. .

For the stir fry topping
No exact measurement for the veggies. Use as many or as little veggies as you want.
Other ingredients
1 tsp oil
Heat a skillet and add chopped green onions, red peppers, spinach. Season with salt and pepper. Cook for about 2 minutes, stirring often. Add chopped tomatoes. Cook for another 2 minutes. Toss in the capers.
